I apparently don't have that valve or I just can control it well, because I can breathe in and out through both at the same time.

Physiologically it's impossible to breath out of your mouth and nose at the same time. Your brain senses the oxygen intake but to breath out, it's impossible. Your brain takes over and allows the air to choose a place to go out. It's like trying to burp and fart at the same time. The gas will choose a place to go out, and it will choose either.
The nose and mouth are actually connected. That's why you can put something in your mouth and make it come out of your nose. It's called the nasopharynx tunnel

You're thinking of the epiglottis. It closes when your swallowing and opens when you breath. It stops objects from being aspirated into your lungs. Sometimes it will stay open and that's one reason why you choke.

maybe, if it is physiologically impossible, then maybe it's like circular breathing...

maybe you air from the lungs go through your nose, and air in your mouth is just pushed around...similar to circular breathing...
